Last month we welcomed a new bundle of joy! She weighs in at a whopping 12 pounds, 6 ounces. She’s 13 inches long. She’s got the prettiest, biggest blues you’ve ever seen. Her name is Bessie.

Isn’t she beautiful? I’m so in love! I’ve been dreaming of having one forever, and my dreams finally came true. She’s just as wonderful as I was hoping.

The best part: Bessie costs less than $30! She comes from my favorite grocery store ever – HEB. Those of you who didn’t grow up in Texas might not know about HEB, but it’s truly the best! I’ve lived in places all over the country, and nothing else compares. I get homesick for shopping at that place.

HEB has it’s own line of just about everything, including cookware. Bessie is from the Cocinaware collection. She’s enameled cast iron, and a great quality one at that. She’s big and heavy, and she holds enough to feed my whole family. That’s a huge plus. 

I typically have a rule in this house – no kitchen stuff unless it’s dishwasher safe. I don’t have the time or desire to stand at the sink scrubbing dishes. Knives and this dutch oven are the exception. She cleans so easily, no matter what I cook.

So what was the first thing we made together? Chicken Tortilla Soup! It had to be something appropriately Tex-Mex. Super easy, delicious, and it was all made in Bessie.

Since Bessie joined our family, I’ve barely cooked in anything else. I can’t stand the thought of shoving her in a cabinet out of sight (she’s so pretty!), so she is currently living on the stove. I can’t recommend her highly enough. You don’t have to live in Texas to go to HEB to buy one, you can now shop online. Here’s the link to your very own Bessie. Chicken Tortilla Soup
A quick and easy tortilla soup that's packed with flavor!

  1. 3 Tbsp vegetable oil
  2. 2 lbs chicken, diced
  3. 1/2 bunch green onions, diced
  4. 6 cloves garlic, minced
  5. 1 can (14 ounce) diced tomatoes with green chiles
  6. 2 bay leaves
  7. 1 tsp Worcestershire sauce
  8. 1 splash Tobasco sauce
  9. 1/2 tsp pepper
  10. 6 cups water
  11. 2 chicken boullion cubes
  12. 1/2 bunch cilantro, chopped, plus extra for garnish
  13. queso fresco or cheddar cheese
  14. sour cream
  15. avocado
  16. fried tortilla strips
  1. Heat the oil in dutch oven/soup pot over medium-high heat.
  2. Brown the chicken.
  3. Add the next 11 ingredients (through cilantro), and bring to a boil.
  4. Turn heat down to simmer, and let the soup simmer for at least 15 minutes.
  5. When ready to serve, add cheese and tortilla strips to bottom of bowl then pour soup over those.
  6. Garnish with sour cream, avocado, and cilantro (and a little extra cheese, if you want).

  2. Belle (also blue) joined my family on January 2! We made the Mexican Pot Roast from the recipe included with her and it was delicious! And then we made Pasta e Fagioli! Next on the list is pea soup. Belle lives on the bar between the kitchen and dining room when not making amazing food.

  5. I had coveted a Le Creuset dutch oven for years. A few years ago a friend had a seasonal job at William and Sonoma and I was able to get a great deal. I use my dutch oven for so many things. I’ve never made chicken tortilla soup even though whenever I have it I love it!

  9. My kitchen goodie is definitely my slow cooker. Though I don’t have a dutch oven so they can’t compete. Someday though 🙂 Also, I love that you added Worcestershire and Tobasco sauce to your soup. That’s a great idea!
