Fall is definitely in full swing! The temperatures are dropping, and the leaves are changing colors and falling. Thanksgiving is just around the corner. Then before you know it we’ll be celebrating Christmas and New Year’s. All these holidays at the end of the year just make everything go by so quickly.
One of my favorite things about Fall is the food! Sweet potato this and pumpkin that. The other day Hubs came home from the grocery store with the two largest sweet potatoes I’ve ever seen. I really wish I had gotten a picture of them. They were easily double the size of your average sweet potato.
We usually just bake the sweet potatoes, but these were too big for that and deserved something better. So I came up with this recipe. I wanted something sweet, but with a little spice, too. I don’t mind telling you that these Chipotle Mashed Sweet Potatoes are delicious.
With this chaotic house I try not to spend too much time in the kitchen. As a result, most of the recipes I make are quick and easy. This one is no exception.
Take your two ridiculously large (or three to four regularly-sized) sweet potatoes and soften them however you wish. I microwaved these, but you could also peel/chop/boil or bake in the oven. They came out hot hot hot, so while they cooled enough to handle I melted the butter and combined it with the brown sugar and chipotle. Then I peeled and mashed the sweet potatoes and stirred in all the remaining ingredients.
These have the classic brown sugar and sweet potato flavor, but that chipotle flavor gives it a kick and makes this dish stand out. It would be an excellent addition to your Thanksgiving table. I know it’ll be on our table!
What’s your favorite way to eat sweet potatoes?
- 2 large (or 3-4 regular-sized) sweet potatoes
- 1/3 stick of butter
- 1/3 cup half and half
- 3 Tbsp brown sugar
- 1/2 tsp chipotle powder
- Microwave sweet potatoes until soft. After they are cool enough to handle, peel and mash.
- Melt butter and combine with brown sugar and chipotle.
- Add butter mixture and half and half to mashed sweet potatoes, stir thoroughly.
