I think this Parmesan Chicken is our new family favorite recipe! It has an amazing Italian flavor, it’s so quick and easy to make, and my kids LOVE it! Let me tell you why that’s such a big deal.
My kids have never been overly-picky when it comes to food, and I’m very grateful for that. Our biggest struggle has been meat. Sometimes it can be difficult to find a way that they like it. Sausage, hot dogs, and nuggets are always an easy option, but if you give them some grilled chicken breasts or pork chops they won’t touch it. Go figure. It has taken so long, but I have finally discovered a recipe for chicken that my kids will actually eat!
My original plan for dinner the other night was to cut up some chicken breasts, sauté them, and then add some barbecue sauce. It’s a hit or miss recipe with the littles, but easy and sounded good to me. Then my four-year-old son passed through the kitchen and asked for some of the “fluffy white cheese” on his dinner. I’m not so sure about barbecue sauce and parmesan together, so my whole plan for dinner got recreated in my head.
I put the barbecue sauce back in the fridge, and grabbed some new ingredients. To make the parmesan chicken you’ll need:
- 3 large chicken breasts, cut into chunks
- 2 Tbsp oil
- Salt and pepper to taste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- Garlic to taste (I prefer a ton of garlic, so I went nuts with it and didn’t even bother measuring. This recipe will work great with either fresh garlic or garlic powder.)
- 1 14.5oz can of diced tomatoes (I used the garlic & onion variety)
- 1/2 – 1 Tbsp balsamic vinegar
- 1/2 cup parmesan cheese (full disclosure: it was a very heaping half cup!) + extra for serving
- Optional: a pinch of red chili flakes
Heat the oil in a skillet over medium high heat. Add the chicken, salt and pepper, oregano, basil, thyme, and garlic. Sauté until the chicken is just about browned.
Add in the canned tomatoes, balsamic vinegar, and optional red chili flakes. Simmer to reduce the liquid into a lovely sauce, approximately 5 – 10 minutes. (If you want a lot of sauce, don’t simmer it quite as long.)
Stir in the parmesan cheese, and continue stirring until the cheese has all melted and blended in. Remove from heat and serve topped with more parmesan cheese!

It all came together so quickly, and I could even referee the craziness of two-year-old twins fighting over toys while I was cooking. That’s always a plus in my book!
This parmesan chicken would be amazing served over some pasta, but we had ours with green beans and it was still amazing! You can even dress it up with a glass of wine on the side, and it would be perfect for an at-home date.
As far as the parmesan cheese goes, I made it with the “white fluffy” stuff that comes in a can because that’s what we had on hand (and it was what my son requested!). Next time I make this I bet it will be incredible with freshly shredded parmesan!
My semi-picky-non-meat-loving two-year-olds scarfed their dinner! I’ve never seen them eat chicken like this! Both girls even asked for MORE CHICKEN! It’s definitely a first. They loved it so much that I could barely get any decent photos of the plate. This is what it’s like to work at home with hungry kids!
