One of my all-time favorite dishes ever is Dan Dan Noodles. They’re a little sweet, they have a great spice, and oh the delicious noodles! However, this dish does not necessarily align with my health goals for the year. I had the worst craving for it last week, so I did some brainstorming. I came up with these Sweet & Spicy Lettuce wraps as a lighter, more diet-friendly version. I’m in heaven!

Like most of my recipes, this one is quick to put together. There’s very little prep, and it doesn’t take long to cook. From start to finish it takes maybe twenty minutes.

Begin by browning your ground chicken over medium-high heat in a skillet. While it’s cooking, chop your green onions, and mix the ingredients for the sauce. When the chicken is cooked, toss in the green onions and let them cook for a minute or two. Stir in the sauce mixture, bring it to a nice bubble, then turn the heat low. Let it simmer for about ten minutes while you prepare the lettuce and the cucumbers. 

Wash the lettuce, and get some nice big leaves ready to fill. After washing and peeling the cucumber, I use my handy-dandy julienne kitchen gadget to make long, thin strips. If you don’t have one, thin slices will work perfectly, too. I just love the cool flavor of the cucumber with the spicy chicken.

Once your sauce has thickened and reduced, you’re ready to eat!

When plating this dish, I choose to let each person make their own lettuce wraps. I put the meat in a bowl, and add the lettuce and cucumber to the plate.

Dig in, and enjoy! Just fill each piece of lettuce with a little cucumber and some meat, tuck in the bottom, and fold over the sides. If it’s not spicy enough for you, add some extra sriracha to your wraps. This can get a little messy, so make sure you have some napkins nearby.

This dish is a little too spicy for my little ones, so it’s the perfect lunch for Hubs and I to enjoy after we put the kids in bed for their naps. Midday date anyone? His only complaint is that it tastes too good and there’s never enough, so next time I make this I’ll be doubling the recipe.

These lettuce wraps taste like an indulgent meal, but I love that I’m skipping the carbs from the noodles. Don’t get me wrong, I still miss the noodles. It’s just nice to have this craving satisfied without completely derailing any progress my waistline is trying to make.

Ingredients
  1. 1 pound ground chicken
  2. 1 cup chopped green onions
  3. 1 Tbsp vegetable oil
  4. 1 cucumber
  5. Large lettuce leaves
For the Sauce
  1. 1/2 cup chicken broth
  2. 3 Tbsp soy sauce
  3. 1 Tbsp sesame oil
  4. 3 Tbsp brown sugar
  5. 1 Tbsp chile paste
  6. 1 tsp garlic powder
  7. 1 Tbsp corn starch
  8. Sriracha to taste
Instructions
  1. Heat the vegetable oil in a skillet over medium-high heat.
  2. Brown chicken.
  3. While the chicken is cooking, chop onions and mix sauce ingredients.
  4. Stir in green onions, sauté for 1-2 minutes.
  5. Stir in sauce mixture, bring to a boil.
  6. Reduce heat to low, and simmer for approximately 10 minutes, or until the sauce reduces.
  7. While sauce is simmering, slice up cucumbers and prepare lettuce.
  8. Plate your dish, fill the lettuce, and enjoy!

Lightening up your favorite recipes is so important when you’re trying to lose weight. You don’t want to deprive yourself of your favorites and then go crazy and overindulge!
